Multiple number, length and rate scales arise in systems of reacting/coagulating particles. Starting from stochastic microscopic models we derive variational descriptions of the macroscopic behaviour that capture the interplay of the scales and, where possible, reveal a consistent thermodynamic model. To do this we use large deviation principles and Gamma convergence techniques. Motivating problems include an asymptotic derivation of simplified living cell simulation methods (spatial temporal master equations) and a spatial model for the emergence of convective towers during hurricane formation.
